Cantina Diomede makes this wine from the most historic grape of Puglia, Nero di Troia. After a partial drying of the grapes in the field, Canace ferments with a long maceration of 15-20 days at a controlled temperature and with selected yeasts. The vinification takes place for 8 months in concrete tanks and 12 months in French barrels.
This wine has a complex bouquet including spices, cocoa, coffee and liquorice, with ripe red berried fruits on the palate. Soft and velvety tannins accompany a long finish.
Enjoy with cured meats and soft cheeses.
