The six wines in this month's Selection Box come from Italy, a country synonymous with fantastic food and wonderful wines. We have a crisp fresh Grillo from Sicily, a lovely Verdicchio dei Castelli di Jesi from Marche, a wonderful mid-to-high-end Pinot Grigio, an exquisite Brindisi Riserva, a rich, dark Primitivo from Puglia and a very good organic Sangiovese also from Marche. ''Created in the 1980s by selecting the best grapes grown in the Montecarotto vineyard, and later enriched with grapes from another three plots situated in the most suitable areas for cultivating Verdicchio dei Castelli di Jesi. All the values of a great indigenous variety find expression in this wine. Contact with its own natural yeasts during fermentation and in the ageing process gives Casal di Serra particular properties of richness and personality, without altering its fine balance and special elegance.'' "The grapes are destemmed and gently pressed without maceration, then the must is prepared for fermentation in temperature-controlled stainless steel containers at 17-18 degrees.

We accompany the exhaustion of the alcoholic fermentation always in steel. We avoid malolactic fermentation. For 6 months the wine remains on the yeasts with frequent batonnage. Finally, we bottle and store the bottles lying down in conditioned rooms for a few weeks before release." Ermacora

An aroma of woodland fruits is dominant on the nose. On the palate it is delicate, lightly tannic and has persistent flavours of cherry fruit and spice, leading to a touch of dark chocolate on the finish. Pairs well with mild chilli and bean pasta bake.

On the nose - plum, blackberry and currant aromas dominate. On the palate - dry, robust, well balanced by fine tannins and a good level of acidity. Great with a barbecue.

Deep dark fruit with hints of liquorice and pepper on the nose. Well rounded on the palate with firm tannins and a good long finish. Lovey with any hearty winter stew.
